Quality
It is also important to understand that many supplements do not contain the quantities of molecules that one would normally find in the whole foods. Without necessarily doubting the word, or at the very least, the printed claims, of manufacturers, it must be remembered that the great majority of phytochemical compounds are very reactive molecules and thus necessarily unstable. There are many examples of the effect this instability can have on the content of a supplement; one of the most spectacular is the case of resveratrol. |
The existence and popularity of these supplements is cause for some concern, since substances rich in isoflavones accelerate the development of breast cancers in laboratory mice with low estrogen levels, proportionally similar to those of menopausal women; these results seem to concur with those of the study previously discussed. |
